Vegan Taco w/ Baked Sweet Potato Fries (Yields 2 servings) -N♥


Taco “Meat” Ingredients

  • 1/4 cup adzuki beans (half for taco “meat”, half for salsa)
  • 1/2 cup almonds
  • 1/2 cup walnuts
  • 1-2 tablespoons of olive oil
  • salt (add as needed or not at all)
  • 1/2 tablespoon curry powder
How-to:
  • soak adzuki beans overnight (approx. 4 hours)
  • soak almonds overnight (between 12-24 hours)
  • soak walnuts overnight (between 12-24 hours)
  • throw adzuki beans in rice cooker and cook til soft
  • place adzuki beans, almonds and walnuts into food processor, blend
  • add olive oil, blend
  • add salt
  • Blend all ingredients together until smooth or reaches desired consistency
  • Place into serving dish and place aside
Salsa Ingredients
  • 1 tomato
  • half onion
  • 2-3 stalks of celery
  • 1/8 cup of cooked adzuki beans
  • 1 dried red chili pepper
  • dried basil
  • olive oil
  • splash of apple cider vinegar (ACV)
How-to:
  • cube all vegetables
  • place all ingredients into bowl
  • add adzuki beans
  • add olive oil, ACV and dried basil
  • Mix all ingredients together to
Baked Sweet Potato Fries Ingredients
  • 2-3 sweet potatoes
  • dried red pepper powder
  • 1-2 tablespoons of honey
  • 1/2 tablespoon of olive oil
  • 1 teaspoon of curry powder
How-to
  • wash potatoes (If you don’t want to eat the skin, peel after washing)
  • cut potatoes into french fry wedges
  • place raw potatoes into mixing bowl
  • add olive oil and dried red pepper powder
  • use your hands to mix potatoes, olive oil and pepper
  • line baking rack with wedges
  • bake for 20 minutes on 200 degrees C (I have a toaster oven. Temperatures may vary depending on unit used)
After baked
  • place wedges into serving bowl
  • drizzle with honey or dip into whatevers clever!

Final steps
  • Wash as much leaves of lettuce as your stomachs can handle
  • Place on a serving dish
  • Set your table 
  • Eat and be Merry!
